Allow about 35–40 minutes of roasting. Squash thickness, pan crowding, and the sausage package instructions may change the timing.
Gather
Ingredients
- 2 small delicata squash (about 1½ lb / 680 g total)
- 1 red onion, peeled and cut into wedges
- 1 lb (450 g) fully cooked mild Italian pork sausage, cut into thick coins
- 2 cans (15 oz / 425 g each) cannellini beans, drained and rinsed
- 3 tablespoons olive oil, divided
- 1 teaspoon finely chopped fresh rosemary
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped flat-leaf parsley
- Fine salt and freshly ground black pepper, to taste
Useful equipment
Two rimmed sheet pans, a large mixing bowl, a sharp knife, and oven mitts.
Make
At the stove
Prepare the squash and pans.
Heat the oven to 425°F (220°C). Scrub the delicata squash, halve lengthwise, and scoop out the seeds. Leave the skin on and cut the squash into ½-inch half-moons. Have two rimmed sheet pans ready so the ingredients can roast in a single layer.
Give the vegetables a head start.
Toss the squash and onion with 2 tablespoons olive oil, the rosemary, and a little salt and pepper. Divide between the pans, spreading the pieces apart. Roast for 20 minutes.
Add the sausage and beans.
Turn the squash and onion. Pat excess water from the rinsed beans, then toss the beans and fully cooked sausage coins with the remaining tablespoon olive oil. Divide between the pans. Roast for another 15–20 minutes, rotating the pans if needed, until the squash is tender with browned edges and the sausage is thoroughly hot. Follow the sausage package’s heating instructions; continue heating if required.
Brighten and serve.
Sprinkle the lemon juice and parsley over the hot vegetables, beans, and sausage. Toss gently, taste, and adjust the seasoning. Divide among four plates and serve warm.
Use sausage labeled fully cooked, not raw sausage. The roasting directions above are for reheating a fully cooked product. Follow the package instructions and keep the mild seasoning so it does not overwhelm the pairing. No wine or spirits are needed in the recipe itself.
Food meets wine
Why this pairing?
Guigal describes this Syrah-led Rhône blend with dark-fruit and spice notes. That is a useful starting point for mild Italian sausage and rosemary, while the beans give the plate a creamy counterpoint and the roasted squash adds a little sweetness. This is a pairing idea to explore, not a firsthand tasting report. Try a bite before and after a sip and notice what changes.
